Pumpkin Oatmeal Cookies
These pumpkin cookies have chocolate chips. But, if you don’t want Pumpkin Oatmeal Chocolate Chip cookies just leave them out, substitute with white raisins or pumpkin seeds. For other variations see recipe notes.
Pumpkin Oatmeal Cookies – Gluten-Free
Makes 24 cookies
Prep time: 1 hour 15 minutes
Cook time: 12 minutes
Ingredients:
- ½ cup butter, melted
- ¼ cup of sugar
- ¾ cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/3 cup pumpkin puree
- ¼ teaspoon salt
- 1 teaspoon ground cinnamon
- 1 ½ teaspoon pumpkin spice
- ¾ teaspoon baking soda
- 1 ½ cups gluten-free baking flour
- 1 cup quick-cooking gluten-free oats
- 1 cup of chocolate chips
How to Make Pumpkin Oatmeal Cookies
Instructions
1. Whisk together the melted butter, white sugar, and brown sugar until the sugar is fully
dissolved.
Add the egg, vanilla, and pumpkin. Whisk to combine.
2. Add the salt, cinnamon, pumpkin spice, baking soda, and half the flour.
Whisk to combine. Stir in remaining flour.
3. Fold in the oats until just combined,
then fold in the chocolate chips until mixed.
4. Cover and refrigerate for at least an hour.
5. When ready to bake, preheat the oven to 350 degrees and line a baking sheet with parchment paper. (or Silpat)
6. Scoop a rounded tablespoon of batter onto the lined baking sheet, leaving an inch to an inch and a half between each cookie.
7. Bake for nine to 12 minutes, or until the bottom of the cookie has just begun to brown. Remove from oven and allow to cool on baking sheet for five minutes before removing to a cooling rack
to cool completely.
