Greek Pasta Salad Recipe
Greek Pasta Salad
Greek Pasta Salad is the perfect side dish for picnics, pot lucks or other occasions. We love making it on hot days as a quick, easy dinner idea. Delicious, healthy and fresh!
Ingredients
- Pasta Noodles 1lb. (such as Rotini, Seashells, Chickpea Pasta, Penne) Cook al dente
- 1 Small Red Onion (chopped into bite size pieces)
- 2-3 Garlic cloves (peeled and minced)
- 1 red bell pepper (seeded and chopped)
- 1 or 2 cucumbers (partially peeled, then sliced & cut)
- Italian flat-leaf parsley 1/2 cup (chopped fine or rough)
- 1 can Kalamata Olives (pitted) (optionally chopped)
- 1 small basket Cherry tomatoes or 2 regular tomatoes (cut up)
- Feta cheese - small container of crumbled Feta (crumbled)
Instructions
- Cook the pasta al dente, (use package directions for the noodles you purchased) rinse it with cold water and drain.
- Set the drained noodles to the side to finish cooling off, and until the other steps are finished.
- Chop all the vegetables.
- Add the chopped vegetables into a large mixing bowl or salad bowl.
- Then add pitted Kalamata Olives (I don't even chop the but, you can).
- Finally, add your drained, cooked and cooled pasta noodles.
- Add the crumbled Feta cheese.
- Mix together.
- Toss with your favorite Greek Salad Dressing (store-bought or homemade) right before serving.
Notes
- Sometimes when I have leftover corn on the cob I cut it off the cob and add it to my pasta salads. This is optional and not in a traditional Greek salad.
- I prefer red bell peppers but, you can use green bell peppers or even both!
- Rotini pasta, seashell pasta, chickpea pasta are all good choices. The key is making it al dente!
- Make this vegan by adding Vegan Feta Cheese.
