Stir it with love and serve it.

I like to make this in a big soup pot. I have two since I have updated my cookware. My most used is this Martha Stewart Pot- it is an Enameled Dutch Oven Cast Iron Pot. What I love about this pot is that you can use it for soups, stews, baking roasts, breads, and more. It’s super sturdy.

Then I also use a soup pot out of my everyday cookware set. It’s nonstick. I grab this if I don’t feel like getting my bigger pot from under the cabinet.

Favorite Chicken Tortilla Soup

This chicken tortilla soup is one of our favorites. We have made this soup over and over again. But, this is the original recipe we started with and it's still a family favorite.

Ingredients

  • 1 pound Boneless Skinless Chicken
  • 3 Garlic Cloves
  • 1 Jalapeno (or other pepper like poblano or even a can of mild diced green chilis (optional, adds flavor)
  • 1 Yellow or white onion (Use half)
  • Cilantro 1/4 cup from 1 bunch
  • 1 Lime
  • Oregano
  • Salt & Pepper to taste
  • 2 Tablespoons Olive Oil
  • 1 Hunt's Fire Roasted Diced Tomatoes 14.5-ounce can
  • 1 Black Beans 14.5-ounce can
  • 1 box 32-ounces Chicken Broth

Garnishes

  • Tortilla Chips
  • Shredded 3-Blend Mexican Style Cheese
  • 2-Limes
  • 1-2 Avocadoes

Instructions

How To Make Chicken Tortilla Soup

  1. Chop all your veggies: onions, garlic, cilantro, and optional jalapeno (seed and chop) or another green pepper.

  2. Slice avocados and put in a bowl on the side until ready to serve (drizzle lime over them to prevent them from browning).

  3. Cut the additional limes in half and set them to the side in a bowl until serving the soup.
  4. Place olive oil in a pot, then add the chicken. Sprinkle with black pepper, and cook until done (Cook slowly for about 10-15min. (depending on the thickness of the chicken breasts) turning over at the halfway point. Don't worry about it being 100% cooked it will finish cooking in the soup pot.) When the chicken is almost done add garlic, jalapeno, and onion and saute until clear.

  5. (NOTE) If you use canned chilies add them at the same time you add roasted canned tomatoes.

  6. Then add the chicken broth. If you cooked the chicken in a pan transfer it all to a soup/stock pot and add chicken broth.

  7. Add the can of fire-roasted tomatoes, 1 teaspoon of oregano, and 1/4 cup of chopped cilantro.

  8. Next, add a dash of salt and pepper (adjust to taste preference), and squeeze half a lime into the soup. Finish cooking on a simmer, occasionally stirring for at least 30 minutes.

  9. When the soup is almost done; Add in (drained and rinsed) black beans for at least another 15 minutes to 30 minutes of cooking on a simmer.

  10. Take out the chicken and cut it into bite-size pieces, it should fall apart easily.

  11. Put the cut-up chicken back into soup to be served. Serve with garnishes (tortilla chips, shredded cheese, avocado, and lime), and enjoy!

Notes

  • You may cut the recipe in half for two people. This serves 3-6 easily. Three people you will have some leftovers if they aren't big eaters. Sometimes I cook mine longer if not in a hurry to let the flavors meld together. I do this on a very low simmer.
  • Additionally, you can cover the pot to help keep the broth from reducing.
  • I like to keep additional chicken broth on hand in case I need to add more liquid to the soup.
  • Yellow onion is sweeter. A white onion will give it more of a kick. But, either will work. I have also used purple onion in a pinch and it adds to the flavors.
