You will need 1 or 2 sheet pans, a spoon or knife for spreading, a few ramekins or small bowls, a pot to blanch the green beans, tongs, and hot pads.

Ingredients
- 1.5 pounds of Chicken Breasts (boneless skinless)
- Potatoes
- 1 package of Green Beans
- Olive Oil
- Mayonaise
- Parmesan Cheese
- Salt, Pepper
- Garlic Powder
- Italian Seasonings
I have been cooking chicken breasts with mayo and parmesan for years. My mom shared this with me years ago. I’ve made a few changes to it. Please don’t knock it until you try it! It is delicious. How To Make Chicken Breasts With Mayo & Parmesan Cheese
Instructions
Pre Heat Oven to 400F
Prep the Sheet Pans. Drizzle a little olive oil over the sheet pan or sheet pans (depending on how many you use) prepare and add the following ingredients.
- Blanch the green beans for 5-7 minutes (in a pot of boiling water), after rinsing with cold water (or ice bath). Fully drain the water and then set them on the prepared sheet pan.
- Wash the potatoes (I leave the skins on or peel them) and cut them into bite-sized cubes. Place them next to the green beans. Sprinkle both with salt and pepper to your preference.
- Unwrap the chicken and add the chicken breasts to a plate or sheet pan to prepare (covered with parchment paper). Add salt, pepper, garlic powder, and Italian seasoning (optional) to one side. Spread a layer of mayonnaise over the chicken breast and coat the mayo with parmesan crumbs by sprinkling it over them (until fully coated). Repeat for the opposite side.
- Set the chicken breasts on the sheet pan or a second sheet pan to bake.
- Bake in the oven until the chicken has reached an internal temperature of 165F and the vegetables are fork-tender. Serve and enjoy!

Recipe Notes
- The bake time is about 15-20 minutes but this will depend on the oven and the thickness of the chicken breasts. Use a meat thermometer to test the chicken’s internal temperature (min. internal temp 165F). Do not overcook the chicken. Let the chicken meat rest for a few minutes before serving.
- This can be baked on one large sheet pan.
- To prevent overcooking, remove each chicken breast from the tray as it reaches the desired internal temperature (around 165°F) and place it on a plate to rest. This allows the remaining breasts to continue cooking without overcooking the ones that are already done.
- Rest the chicken before slicing. This helps redistribute the juices throughout the chicken. It also helps stabilize the meat. A rest time of 5-10 minutes for chicken.
