Typically, I make my chicken soup by cooking the chicken. On this day, I was looking for a quick way to make chicken soup. We had picked up a rotisserie chicken and I still had over half of it left from the previous night.
You will get two meals (depending on the size of your family) from one pre-cooked rotisserie chicken (I picked the rosemary garlic chicken from our local grocery store, Albertsons). Use the other half for another meal, such as chicken salad sandwiches, chicken, potatoes, and a salad…
I made the soup on the second night but, you can do the opposite if you don’t already have a rotisserie chicken.
Chicken Rotini Soup
Chicken soup is perfect for cold days and winter days, spring days, dinners, or if you are under the weather… Even though we used a quick pre-cooked rotisserie chicken we got all the delicious flavors using broth, bullion, and seasonings.

Chicken Soup With Rotisserie Chicken
This quick chicken soup recipe using rotisserie chicken is so flavorful and the best part is that you don’t have to cook it for hours!
Recipe For Chicken Rotini Soup With Rotisserie Chicken
- Servings: 6-8
- Prep 10 minutes
- Total Cook Time: 30 Minutes
Cook Time: 20 minutes and Additional Cook Time For Noodles 10 minutes
Recipe Notes:
- Make this one-pot soup in a 5-quart pot with a lid. You can cook the soup longer than this if time allows but, do not add the noodles until near the end of the cooking time.
- Use a food chopper like this or like the one I own the Vidalia Food chopper to speed up prep time!
- Add Salt and Pepper to the soup after cooking, to suit your taste preferences.
- Make substitutions or omit ingredients not suited to your taste preferences.
What are some ways to add more flavor to the soup?
Add fresh herbs to the end of the soup cook time such as oregano and parsley. Additionally, use seasonings such as additional chicken bullion, onion powder, garlic powder, paprika, and red pepper flakes.
For Chicken Rotini Soup: Italian seasoning would complement this soup and add more flavors.
How do you adjust the spice level of soup?
Adding spices such as paprika, cumin, cayenne, and red pepper flakes. Or freshly seeded jalapenos or poblano peppers. These are just a few ways: Note if experimenting make adjustments a little at a time, allow for the flavors to meld, and then add more if needed. Remember not all fresh peppers have the same spice level.
How long to keep homemade soup in the refrigerator?
The soup can last 3-4 days when properly stored in airtight containers in the refrigerator. Also, note the freshness of the ingredients and vegetables used may impact how long it will be good to eat.
Can you freeze soup with noodles?
It is not recommended as the noodles will become mushy. You can freeze the soup without the noodles. Then add cooked noodles to the soup when you are ready to eat it.
How long can you keep homemade soup in the freezer?
The soup can be frozen for 2-3 months in freezer bags or airtight containers. Be sure to label the containers (with the date packaged or expiration/use-by date).
Note: For cream soups, the storage length is less.
When storing and freezing soups be sure to trust your senses if it looks bad or smells bad don’t use it. Err on the side of caution.
Ingredients
- Rotisserie Chicken Or Pre-shredded Rotisserie Chicken (use rotisserie chicken for soup: chicken breasts and thigh meat) or leftover pre-cooked chicken
- (1) 32-ounce Chicken Broth
- Olive Oil (1-2 Tablespoons)
- 1 – 14.5 ounce can of Stewed Tomatoes
- 1 Tablespoon of Knorrs Chicken Bullion
(plus 1 can of water 14 ounces) - 1/4 teaspoon of Black Pepper
- 1/2 teaspoon of Garlic Powder
- 1 Tablespoon of dried Oregano
- 3 Celery Sticks
- 1/2 bag of Baby Carrots (about 1 cup) or carrots
- 1/4 of a large Onion (yellow or white)
- 1/2 of a large Red Bell Pepper
- 1 cup of Rotini Noodles or (Gluten-Free Rotini Noodles)
Add any items you need to your Target pick-up order or same-day delivery order.
Instructions
- Rinse, chop, and saute the vegetables in olive oil.
- Cut up (dice or shred) and add the precooked chicken.
- Add the chicken broth, bullion, stewed tomatoes, and 1 can of water (filled from the empty stewed tomatoes can)
- Cook on a simmer until the vegetables are tender about 15-20 minutes. Add the noodles 10-15 minutes before the finished cooking time. When they are al dente it is ready to serve and enjoy!
Ladle the chicken soup with rotini into bowls and serve with biscuits. It is easy to make them from the recipe on the Bisquick box. You can do this while the soup is cooking.
