Chicken Tacos Slow Cooker
Have you ever entered a recipe contest? Here goes for me – Challenge accepted Desert Pepper. I am participating in the desert pepper recipe contest and decided to make Chicken Tacos Slow Cooker.
What makes this unique is adding some authentic Mexican flavors and the medium salsa from Desert Pepper… Simple ingredients are dumped into the slow cooker (or crockpot) and then in 4 hours, you will have tender, moist, flavorful, chicken for your tacos (And to use in other Mexican recipes btw – tostadas, taquitos, enchiladas, soups…).
I’ve been perfecting my favorite chicken taco recipe over the years. It is truly one you will want to make over and over again. I love a good multi-use recipe and my favorite way to use the shredded chicken meat is in tacos.

Nacho Tacos
Not your (nacho) average tacos! Wink, wink.
Can I say, these are so tasty! If you love nacho sauce, add chile con queso to the tacos! I loved the chili con queso with tortilla chips, too. The peach mango salsa is sweet with a little spice. And the medium salsa is spicier. Yummy! All three are so delicious!
Chicken Tacos in a Slow Cooker
Now, let’s get cooking!
This recipe serves 6. Double the recipe for more servings or if you want leftovers. You can make chicken tortilla soup using any leftover chicken and the broth from cooking the chicken taco meat. I’ll share that later.
Chicken Taco Meat Ingredients
- 2 pounds of Chicken Breasts (boneless, skinless)
Or more if doubling. - 1/4 cup of Purple Onion
- 1/2 cup of Red Bell Pepper
- 2 Cups of Chicken Broth
- 1 can 7.75 ounces of Salsa de Jalapeno (or) Tomato Sauce
- 1 cup of Desert Pepper Medium Salsa (Cantina)
- Spices – 1/4 teaspoon of Salt (to taste preference), 1 teaspoon of Black Pepper, 1 Tablespoon of Oregano, 2 teaspoons of Chili Powder, 1 teaspoon of Garlic Powder
- 1 cup of water
Taco Topping Ingredients
- 1 pack of 12 Flour Tortillas or 12 Corn Tortillas
- 1 bag (pre-shredded) Shredded Lettuce
- 4 ounces Shredded Cheese
- 1/2 Purple Onion
- 3 Green Onion
- 1 jar of Desert Pepper Salsa
- 1 jar of Chili Con Queso
Other taco ingredients can include sour cream, jalapenos, diced tomatoes, quartered lime wedges, cilantro… You can use an online taco bar calculator to figure out amounts. I always keep extra tortillas on hand. I buy them 24 and 30 count. In case more are needed.
Instructions
How To Make Chicken Taco Meat In The Slow Cooker
- Unwrap the chicken and add it to the slow cooker.
- Then measure and add the seasonings to the chicken. Finely chop or mince the onion and red bell pepper—next, top with the rest of the ingredients.
- Add the lid to the slow cooker and set it on high for 4 hours.
- When the chicken is done, remove it with tongs, and shred the chicken meat with a fork or knife on a cutting board. Then, add it to a bowl. Spoon a little broth over the shredded chicken in the bowl to keep it moist.
- Using tongs, a fork, or a slotted spoon, put the cooked, shredded chicken into your flour or corn tortillas and garnish with your favorite taco toppings! Top with Salsa or Chile Con Queso!

- This recipe is easily doubled for more servings.
- Save the broth from making the chicken meat for the tacos. If you have any leftover shredded chicken, it can be added to the broth to make chicken tortilla soup.
- Use an online taco bar calculator to help you make adjustments.
- I like using a vegetable chopper to speed up the prep.
- NOTE: if you have big eaters such as teenage boys. Add half a pound of chicken meat to the recipe. Making it with 2.5 lb of chicken breasts (boneless skinless)
