Double Chocolate Chip Cookies Stuffed With Ice Cream Halloween Treat Recipe
I enjoy making easy treat recipes. I think you’ll love today’s fun, easy, and delicious dessert treat. We are sharing our recipe for ice cream stuffed cookies. This recipe can be made for any season just by swapping out the sprinkles but, we made ours for a Halloween treat.

Sammie, and I love spending time in the kitchen together. Although, we don’t always have time to bake together due to our busy schedules. But, I enjoy making an occasional sweet treat. Sometimes for school parties, her tennis team or family gatherings. Do you enjoy bringing the treats?
But, on this day I just wanted to give her a surprise. She had worked all weekend long being a ball girl for the professional women tennis player’s tournament, in the heat. This year the competition happened to be in Paso Robles.
I decided to make Double Chocolate Chip Cookies, and stuff them with ice cream. I decorated them for Halloween, which was easy just by adding seasonal sprinkles.
I didn’t tell her but, I was testing out two ways for stuffing cookies for this year’s Halloween treat idea. I made them two ways. The first way was to stuffed the cookies with vanilla ice cream. The second way was to hand mix vanilla ice cream with nuts, and caramel for the ice cream stuffing. Below you can see how to bake, and make this yummy, gooey, treat.
I have been eyeing a few new baking recipes to try that I spotted that were from Immaculate Baking, and Pinterest. Finally, I decided to heat up my oven, and kick off baking season.
Why do I say finally? Because it’s still been hot out here, and just cooling down enough to heat up the oven for this recipe. It only takes 11-13 minutes baking time.
Here’s how to make the Double Chocolate Chip Ice Cream Stuffed Cookies
- Grab the Double Chocolate Chip Cookies (or) pre-mixed refrigerated Chocolate Chunk Cookies ==> GET $1. OFF (coupon)
- vegetable oil, if using mix
- 2 eggs, if using mix
- vanilla ice cream
- seasonal sprinkles (optional) I used these Halloween sprinkles
- chopped pecans (optional)
- caramel syrup (optional)
I have to admit I cheated a bit by using Immaculate baking cookie dough, and mix. Shh, no one is the wiser.
I ran down to the store to grab the baking supplies I needed, you can find them at Target, local grocery stores, and online (coupon). I picked up both the double chocolate chip cookies in the baking section, and the chocolate chip cookies in the refrigerated section. Use either cookies for this recipe. I’ll update you how I used the chocolate chunk cookies soon, if they don’t get eaten up first, lol.
- Make the box mix, and bake or bake the premade cookies per directions.
- Make sure not to over bake them.
- Let cool about 15 minutes.
- Soften ice cream slightly.
- Place 1 cookie on the plate
- Scoop ice cream onto cookie (or pre-make vanilla, caramel, nut crunch ice cream to stuff them with *see below)
- Add sprinkles
- Top by adding your second cookie
- Place in freezer until ready to serve or serve right away with a spoon!
It’s easy to make the vanilla, caramel, nut crunch ice cream. Take vanilla ice cream, soften slightly. Chop up pecans. Add pecans to ice cream scooped into the bowl, and drizzle caramel syrup. Stir well. Freeze for a little bit, then add to your baked cookies.
Honestly, I think these double chocolate chip, and chocolate chip cookies are the best for making ice cream stuffed cookies! Not only are they good, gooey, and delicious; they are organic, and taste amazing. Bonus, the cookies are quick, and easy to make.
