Easy Gnocchi Chicken Soup Recipe – Get ready to cook a flavorful soup that is a complete meal! Gnocchi soup is the ultimate comfort food.
One thing we love making and eating all year long is a good homemade soup. As a kid growing up my grandparents cooked delicious meals for us including gnocchi soup.
We spent summers with them and relished their Italian cooking. They were chefs. Can you imagine all the sweet-smelling Italian foods being made? We were always in the kitchen.
Cook Gnocchi Soup at Home
Our family loves Olive Garden but, our new restaurant is 45 minutes away from us. The Italian restaurants in town are expensive being mostly high-end. I decided to make my version of a family favorite adapting a recipe for a Copy Cat Olive Garden Gnocchi Soup.
Making soup at home is economical and tasty. Bonus, for us you don’t have to travel 45 minutes! Soups are about the only thing I can get my teen to agree to eat 9 out of 10 times. She loves homemade soup as much as I do! Let me share how easy this soup is to cook for your family.
Easy Gnocchi Chicken Soup
The ingredients you need to make this soup are similar to a chicken soup except having on hand half and half and a package of gnocchi. Don’t be afraid to try a recipe with a creamy broth it’s rather easy to achieve.
And if you need you can cut the recipe in half making a small pot.
Step-By-Step Instructions for Making Gnocchi Soup at Home
What’s great about gnocchi is you can keep a package in your cupboard to make this soup any time. Just be sure to use it before its marked expiration date.
Find gnocchi in Target stores they carry the brand Archer.
But, my favorite brand is the Gia Russa Gnocchi with Potato this product needs no refrigeration until it’s in your soup. I’ve been dying to try their Whole Wheat Gnocchi with Sweet Potato both these cook in 2-3 minutes and are a product of Italy. Drop them into your soup during the last 3 minutes of cooking just before serving the soup!
How To make gnocchi soup
First, cook skinless, boneless chicken breasts in a tablespoon of olive oil and sprinkle with garlic powder. Cook it for about 7 minutes (depending on the thickness) on each side (or until it’s reached 165F degrees, and done. Set the chicken aside, let it cool, and chop it into bite-sized pieces.
Next Chop and Saute the vegetables in the pan with a little olive oil.
Chop your Vegetables
- 4 Carrots (peeled and chopped)
- Celery 2 large stalks (chopped)
- 1 Onion (chopped)
- 3 Garlic Cloves (peeled and minced)
After you Saute your vegetables you’ll want to make your roux to add to your sauteed vegetables.
Make the Roux using these steps
- Add approx. 3 -4 tbsp. butter to vegetables and let it melt (in the pan) and sprinkle 1/4 cup flour on them stirring until thickened on a low simmer.
Next
- Next whisk in the 2 cups half and half stirring until thickened for roughly 5 minutes longer.
- Then immediately pour your 2 pkg. 32 oz. chicken broth into the stock pot.
- Add in Salt, and pepper to taste. And add 1/2 tsp. thyme and 1/2 tsp. Italian parsley or fresh chopped Italian parsley.
Then add in either 1-1/2 cups fresh chopped spinach or a small package of frozen-thawed and drained spinach.
Cook on a medium-low heat for about 40 minutes.
Lastly, about 3 minutes before serving add in your gnocchi one full package is plenty.
Serve with a salad, bread sticks, or french bread. Sprinkle the soup with Parmesan Cheese. Enjoy!

Easy Gnocchi Chicken Soup
Ingredients
- 1 lb. skinless boneless chicken breasts
- 2-32 oz chicken stock
- 2 cups half n half
- 1 yellow or white onion
- 3 cloves garlic
- 4 large carrots
- 2 large celery stocks
- 1 package of gnocchi
- salt & pepper
- 1/2 tsp. thyme
- 1/2 tsp. fresh chopped Italian parsley or dried Italian parsley
- garlic powder
- Parmigiano-Reggiano or Parmesan Cheese
Instructions

The first thing you want to do is cook up some boneless, skinless chicken breasts in a bit of olive oil sprinkled with garlic powder until just cooked. Set aside, let cool and chop into bite sized pieces.

Then add in either 1-1/2 cups fresh spinach or frozen thawed/drained spinach. Cook on a medium low heat about 30 minutes. About 3 minutes prior to serving add in your gnocchi one full package is plenty.
Recipe Notes
Parmigiano-Reggiano shredded or Parmesan Cheese optional to sprinkle on bowl of soup.
