Ground Beef Soup
You can easily adapt this recipe if you don’t have something on hand or don’t like certain vegetables. Easily substitute and add frozen veggies as needed.
Ground Beef Soup Recipe
Enjoy this ground beef soup with vegetables any night of the week!
Ingredients
- 1/2 lb. Ground Beef (lean 90/10)
- 3 Tablespoons Olive Oil
- 1/2 cup Purple Onion (chopped)
- 4 Garlic Cloves (minced)
- 3 Carrots (chopped)
- 1/2 of a Red Bell Pepper (chopped)
- 1 Sweet Potato (peeled and chopped)
- 1-2 cups of Baby Spinach
- 1 Zucchini (chopped into quarter pieces)
- 2-4 Potatoes (peeled and chopped)
- 1-32. ounce Beef Broth
- 1-14.05 ounce Can of Diced Italian Tomatoes
- 1- 6 or 8-ounce can of Tomato Sauce
- 1 Teaspoon Italian Seasoning
- Salt and Pepper to Taste
- 1 teaspoon of Better Than Beef Bullion or 1 Beef Bullion Granulated or Cube
Cooking Tools For Making Soup
You will need a soup pot or stockpot (5 quart or larger). Cutting board, chef knife, (optional) food chopper, vegetable peeler, wooden spoon, and a ladle. Soup bowls and spoons.
Instructions
Get out the necessary supplies and groceries listed above.
- Wash, chop, and peel the vegetables. Keep the potatoes in a big bowl of cold water until needed.
- Saute in olive oil (in your soup pot): onion, red bell pepper, celery, carrots, and garlic.
- Push the sauteed vegetables to the side add the lean ground beef and cook until browned.
For ground beef with more fat; put vegetables in a bowl and drain the fat after browning it. - Add the beef broth, tomato sauce, beef bullion, and the rest of the vegetables to the soup pot.
- Stir in the seasonings.
- Bring the soup to a boil. Then reduce heat to a simmer and lid the pot.
- Cook until the potatoes are tender.
- Adjust seasonings if desired.
Serve and enjoy!

You can serve it with bread, biscuits, or crackers. Or make a green salad to go with the soup. On this day I made homemade jalapeno cheddar dutch oven bread.
