Are you looking for a cake to make with fresh strawberries? This Strawberry Cake is a two-layered (vanilla) cake with strawberries and whip cream. Both in the middle and on top plus, garnished with strawberries. It’s berry delicious! To lower the calorie count I used a whipped topping. Go decadent or go lighter but go big on the strawberries! Bite, after bite this is a winning combination.

Strawberry Cake

I made this cake with fresh strawberries on top when my grandsons came to visit. I honestly thought we might be freezing some because it serves 12. But, low and behold it somehow disappeared over the course of their visit. Sorry, mom, I let them eat cake! (grandma rules) lol Just joking she doesn’t mind them having a dessert now and then. 

The cake will easily hold up with a large helping of strawberries in the middle and on top. Make this dessert cake anytime you have fresh strawberries.

Summer and spring are the perfect time to serve it but, luckily for us, we have a long strawberry season that heads well into fall. Which means I might just be making this again for my daughter in laws baby shower. Or the end of summer for parties.

This is an easy strawberry cake recipe. Let me show you how to make it

Homemade Strawberry Cake

Ingredients

How to make a strawberry cake 

  1. Preheat oven to 350 degrees
  2. If making your buttermilk make it first. Add milk with 1 tablespoon + 1 tsp. of white vinegar and set to the side until needed.
  3. Mix all dry ingredients into a separate bowl, whisk slowly together and set to the side.
  4. Grease or spray with non-stick spray the bottom of the cake pans and cut parchment paper to fit the bottom of your cake pans.
  5. After adding the parchment to the greased pans, grease the paper too. Set to the side until the cake batter is ready to be added.
  6. Cream butter, sugar, vanilla extract in your mixer’s bowl or mixing bowl.
  7. Add egg whites one at a time, and continue mixing. After adding all 4 egg whites move on to the next step.

  8. On a low speed add flour a little at a time and alternating between flour and adding buttermilk a little at a time until it’s all added and mixed. (Don’t over mix)

  9. When combined, pour into your prepared cake pans, equally.
  10. Bake for 25-30 minutes (until a toothpick or knife comes clean, check the last 10 minutes of bake time)
  11. Remove cakes from the oven, cool 10 minutes.
  12. Turn out (remove) cakes onto cooling racks to finishing cooling.

How to make the cake topping

    1. Wash, hull, slice the strawberries and add 1/4 cup granulated sugar into a bowl and set to the side for at least 15 minutes or longer. The combination makes a juicy syrup the longer it sits.

    2. Add the strawberries to the top of one of the cakes and a little of the syrup drizzled over the cake and strawberries, NOTE: reserve some strawberries for garnishing the top.
    3. Add a thin layer of the whipped cream (or whipped heavy whipping cream topping) topping then, add the second cake right on top of the first cake with strawberries and whip cream.
    4. Top the cake with the rest of the whipped topping garnish with the remaining strawberries.
    5. Your cake is ready to serve or keep loosely covered in the fridge until needed.

Can you make the topping pink? 

Yes, add  pink food coloring

Yield: 2 round 9 inch cakes

Ingredients

Dry Ingredients

  • 2 cups flour (white all purpose)
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/8 tsp. salt 

Wet Ingredients

  • 1-1/3 cup buttermilk (store-bought or homemade) (I make mine homemade see notes for how-to) 
  • 2 tsp. vanilla 
  • 1/2 cup slightly melted butter
  • 4 egg whites 

For the cake topping

  • 2 standard small strawberry baskets of strawberries - wash, hull, slice and add 1/4 cup sugar into a bowl and set to the side
  • 1 tub of whipped topping (or whipping cream)

Notes

How to make Buttermilk - 1 cup milk + 1 tablespoon of lemon juice or vinegar (white) Let the mixture stand for at least 10 minutes. The milk will curdle, then it's ready to use in your recipe. Add more lemon juice or vinegar proportioned to the amount of milk you are using.

  • 2 standard small strawberry baskets of strawberries are probably equal to 2- 4 cups cut-up strawberries depending on the berries size. You can always pick up extra berries for garnishing.
  • Keep your cake refrigerated store easily up to 3 days. (the longer you keep it the strawberries will deteriorate and cake may get soggy)
  • Or try freezing the unused portion to use at a later date.

How do you keep your strawberry cake fresh?

  • Store it loosely covered in the refrigerator for up to three days. 

This is really a show-stopping cake. I don’t even know that my photos can do the homemade strawberry cake justice. I had to take the photos late since the boys were visiting. But, when I make it again I’ll update my photos.

Serve it for bridal showers, baby showers or anytime you have guests over. Easy to make ahead and serve.

Can you make it ahead of time?

  • Yes, but the sooner you serve it is better. For best freshness serve the same day or very next day. If serving the next day, garnish the cake the day you are going to serve your cake. And for the best results assemble the cake and garnish the same day too.
