Lemon Cake Recipe With Lemon Glaze
Make this lemon cake recipe! It is one cake with a lemony flavor you will want to make more than once. Enjoy its citrusy flavors and moist texture. Add a glaze plus the sweetness from the powdered sugar. It’s not too sweet or tart. This lemony cake is one of our favorite cakes made from scratch.

Lemon Cake
The recipe for a lemon snack cake is so easy to make! Use a 9″ round baking pan. The recipe is for a one-layer cake. The lemon cake is topped with a lemon glaze.
Then the cake is sprinkled with powdered sugar. Enjoy all the citrusy flavors as you bite into this moist cake!
Lemon Cake Recipe
- The cake is easy to make. Follow the instructions on the recipe card. Read all the recipe notes here and on the recipe card.
- When using fresh lemon juice squeeze the lemons add the juice into a bowl, and remove the seeds. I like using a lemon juicer or lemon reamer.
- Add the lemon zest and juice just before adding the batter to the baking pan to bake.
- Drizzle lemon juice to the top of the cake. (This step is done after the cake is fully baked, cooled, and removed from the baking pan.)
- Use a pastry brush to add the juice to the cake. (Some juice may flow off the cake.)
- Optionally, combine the lemon juice (1/4 c) and powdered sugar (3/4) to make the glaze. This was how it was done in the original recipe.
- After the lemon juice has soaked into the top of the cake, add the powdered sugar.

Ingredients
- 1 1/2 cups flour (all-purpose)
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup vegetable oil (Wesson or other)
- 1/2 cup Greek Vanilla Yogurt (or plain Greek Yogurt)
- 1 cup sugar
- 3 large eggs
- grated lemon zest
- 3 tablespoons fresh-squeezed lemon juice (or bottled lemon juice)

Instructions
- Preheat oven to 350 degrees F
- Prep your baking pan by spraying it with non-stick baking spray with flour evenly.
Instructions for making the lemon cake
- Measure the flour, baking powder, and salt add to a bowl. Then whisk ingredients slowly and set to the side.
- In a large mixing bowl or mixer add sugar, eggs, Greek yogurt, vegetable oil. Mix until blended.
- Next, slowly add flour mixture, mixing together with wet ingredients.
- When combined and smooth mix in the lemon juice and lemon zest. Mix until incorporated.
- Pour into the prepared baking pan and bake until a toothpick (on a clean knife) comes out clean.
- Time varies based on altitude and oven, about 30-40 minutes.
- Take the cake out of the oven when done and let it cool before inverting the cake onto a plate.
Glaze for lemon cake
- Slowly pour lemon juice on the cooled cake that has been removed from the pan.
- Some of the juice may drizzle down the sides.
- To complete the cake after all the lemon juice has soaked in, sprinkle the cake with confectioners sugar and serve.
Notes
- You can use a bottled lemon juice like this if you don't have fresh lemons.
- You can use non-stick spray and add flour to the pan and move it around the entire pan, then shake out excess flour. Do this if you don't have bakers non-stick spray with flour.
- When using fresh lemon juice squeeze the lemons adding the juice into a bowl, and remove the seeds. I like using a lemon juicer or lemon reamer.
