Lo Mein Recipe Quick & Easy
Dear Creatives, You know when things get stressful? Your immune system says “gottcha”! You start feeling blah! I don’t want to go there! First for all you new readers Sammie my daughter had broken her wrist not to long ago, then we find out she needed surgery to move the bone (luckily they did it without cutting) closed bone reduction, then school started! We all were pushed back a bit, running on empty Sammie who never has gotten sick except once in 5 years of school & is now fighting a cold. Boo! & not Halloween crafting boo I may say. She loves chicken soup which is great, but I tried to look for something different that had a soup feel but wasn’t & could suit us all for dinner. Victorious! I found a recipe for Beef Lo Mein! She loves Chinese & Japanese foods & so do we. I had to try it!
Well, of course as usual you never have all the ingredients & who wants to run to the store with a sick kid? I hate grocery shopping anyway, btw! (side note use ziplist, hand Mr. coupons, send him shopping list to his phone, done! or that is until he gets home & I put it away, teamwork!!) Ok, well no shopping this day. So luckily we had most of the items needed & I improvised making this vegetarian style, note I say style as I used beef stock, sure you can use veggie stock! So here is the recipe that I came up with, packed with a few veggies, so good there was only enough left for their lunches. Imagine having broccoli, snow peas…..to add in. Yum! Happy to report with lots of rest over the weekend & lo mein & soups shes feeling better!

Quick & Delicious Lo Mein
Ingredients
- 12 oz. soba noodles
- sesame oil 2-3 tsp.
- 4 cloves garlic- chop
- 4 green onions - chop
- 1/2 red bell pepper -slice thin
- 1/2 package mushrooms -slice thin
- 3./4 cup baby carrots - slice thin
- 1 - 14.5 oz small can of beef or vegetable stock
- 1/4 cup soy sauce
Instructions

Prep veggies by washing & then slicing or chopping as mentioned above

Boil water while that is going on & cook Soba noodles per directions on package

Saute all veggies in sesame oil lightly

Next add soy sauce & beef broth to same pan as veggies are cooked in, place on simmer.

Drain Soba noodles when done & add to veggies with broth!

Serve solo, with rice or like us I made frozen veggie pot stickers on the side.
