Herb Roast Beef Recipe – Easy Enough For A Weeknight!
Today I have an easy recipe for your meal planning, it’s a roast beef recipe! I tried this along with a few other new recipes for my Meal Plan Monday lineup. What is not to love about a meal you can prep and pop into the oven then go back to doing other things? I love cooking in the oven. Herb Roast Beef recipe is so easy to make!
You can pair this recipe for roast beef with your favorite veggies, side dishes, salads, and potatoes or rice for dinner.
Today’s meal is well balanced and easy to prepare. If you have a smaller family size at home you might have leftovers. This is the perfect lunch the next day or for making another dish with leftover meat. Like roast beef sandwiches, beef soup, or chili with chunks of beef. Honestly, I felt a little nostalgic when I was cooking this recipe. It reminded me of my grandma’s Sunday dinners.
“This is a hearty meal fit for the working men,” as my grandma used to say. During her lifetime the farm men came to eat the bigger meals at lunch and it’s was called dinner. She lived on a cotton farm in Texas. Often Sunday dinners for us would consist of a meal something similar to this as I was growing up.
How To Make Herb Roast Beef Recipe
Get your groceries ahead of time; Beef for roasting, herbs, Dijon mustard, garlic, and lemon. A handy cutting board and a sharp knife. (Here’s a handy chart for how much meat per person how much meat to serve per person) In case you aren’t sure how much to buy.
Next, you just chop, mix, crush the garlic, and add the ingredients into a mixing cup. With the exception of the fresh Rosemary.
Don’t worry about the mess a quick few wipes when your roast is popped in the oven and no one will know you’ve been cooking with the exception of that delicious aroma.
- Spray the baking dish/pan with nonstick food spray.
- Next, with the fat side up. You pour all the mixture onto the roast beef.
- Then add your fresh rosemary, equal to about 2 sprigs.
- Add washed, cut potatoes, and quartered onion around the side of the pan.
Cook for about 20 minutes per pound. Let the meat rest for 10-15 minutes then slice it up. We served ours with freshly cooked broccoli. But, other side dishes to consider would be, green beans, asparagus, artichokes, or a green salad.
I almost had a flashback to some 1950s image of a lady in a frilly apron handing off the plate to Mr. to serve. lol, The reality is I handed it off so I could take a few photos to share with you. Then we rushed to the table to eat while it was still warm.
Herb Roast Beef
Herb Roast Beef - I love it for Sunday dinner but, perfect for meal planning. Because it is easy enough for a weeknight. Prep 15 minutes, roasts in the oven. Done in under 2 hours or when the beef reaches temp! Grab this roast beef and give it a try. Pair it with your favorite vegetable side dishes. It's so delicious!
Ingredients
- 4 lb. Top Sirloin Beef roast (or Bottom Round or Top Round Roast)
- 3 crushed garlic cloves
- 2 tablespoons lemon juice
- 2 tablespoons Dijon Mustard
- 2 tablespoons Olive Oil
- 1/2 teaspoon oregano
- 1/2 teaspoon thyme
- 1/4-1/2 teaspoon pepper
- a few pinches of salt
- 2 fresh sprigs of rosemary
- half an onion quartered
- Pam or another nonstick food spray
- 4-6 cut potatoes
Instructions
- Peel and crush the garlic cloves with a garlic press.
- Squeeze lemon juice with a lemon squeezer into a large measuring cup or bowl.
- Measure out Dijon mustard and olive oil and add all the ingredients into the measuring cup.
- Next, add all the dry herbs. Mix together.
- Take out your roasting pan and spray with nonstick food spray into the pan.
- Add (beef) meat fat side up.
- Pour mixture over top of roast add rosemary sprigs.
- Next, add cut washed potatoes and quartered onion around the edges of the pan.
- Bake in the oven at 350* until done. About 20 min. per pound.
- Use a food thermometer to ensure it's cooked properly. 145°; medium, 160°; well-done, 170°).
- Remove to a serving platter, at your recommended food-safe doneness.
- Let stand 10-15 minutes, prior to slicing!
- Serve and enjoy!

- Often times I do sear the meat first, prior to baking in the oven. See how to sear the roast in the video. I didn't sear the meat this time but, you can.
