Mexican Pizza Recipe – Make Mini Mexican Pizzas For a Brunch
Mexican Pizza Recipe – Make homemade, delicious, easy-to-make Mexican Pizzas. Make them for dinner with full-size corn tortillas or make mini Mexican pizzas. Why? Because they are perfect for dinner or parties! Serve them for a holiday brunch or brunch!
Made with fresh ingredients and packed with flavor. They are sure to be a hit! When making them for a brunch/party prepare them with street-taco-sized corn tortillas, as I did. It is easy to make them because you can prep the ingredients and ground taco meat beforehand, then heat and serve them.
The other day I shared how to make Chicken Tacos in the Slow Cooker. I am participating in the desert pepper recipe contest and decided to make Mini Mexican Pizzas for my brunch entry.

Mini Mexican Pizzas
For the Mexcian Pizzas – You can make the Mexican pizzas with mini tortillas (street-taco-size). Or use taco-size (corn) tortillas if you make this for dinner. For this recipe, the ingredients include my favorite homemade taco meat (that is so flavorful) and refried beans on the inside of tortilla shells. The only difference is the size of the corn tortillas you use, the street-size corn tortillas are perfect for a brunch.

Let’s Make Homemade Mexican Pizza
To make the taco meat. Use ground beef, ground turkey, or plant-based vegetarian ground meat. I have used all three! Additionally, you can use your favorite recipe for ground taco meat. Or make it quick and easy using a packet of taco seasonings.
Make The Seasoned Ground Beef/Taco Meat Ahead of Time!
Ingredients For The Taco Meat
- 1 1/2 lb.- 2lb. of Ground Beef (lean)
- Olive Oil
- Red Bell Pepper
- 1/2 Purple Onion (chopped)
- Garlic Cloves
- 1 Jalapeno (seeded)
- Spices – 1 teaspoon of Chili Powder, 1 teaspoon of Hot Mexican-style Chili Powder, Salt, and Pepper (to taste preference), 1 Tablespoon of Oregano.
(If you prefer use 2 tsp. of the chili powder you have on hand.) - Salsa de Jalapeno (or 1 small can of tomato sauce)
- 1/4 cup of Desert Pepper Salsa (reserve the rest for the topping)
How To Make the Seasoned Ground Beef/Taco Meat
Instructions
- Prep the onion (chop), garlic (peel and mince), 1 jalapeno (seeded and minced), and half a red bell pepper (chop). Chop them finely. Add them in a non-stick pan with the ground beef, and spices. Stir and cook on a medium heat. Break up the ground beef and cook until almost browned on all sides (but, not done).
- Add half the can of salsa de jalapeno (or tomato sauce) and 1/4 cup of medium Desert Pepper Salsa. (Save the rest for the Mexican Pizza topping).
- Finish cooking on a simmer, and let the liquid reduce. Before, all the liquid has evaporated. Lid the pan and shut it off.
Mexican Pizzas Recipe Ingredients
Ingredients for Mexican Pizza and Mexican Pizza Toppings
- 30 count Corn Tortillas (street-size)
- 1 can 16 ounces of Refried Beans (slightly warmed up)
Have an extra can on hand if needed or size up. - Prepared Taco Meat (somewhat warm)
(seasoned ground beef recipe above) - Sharp Cheddar Cheese (or Pepper Jack Cheese, Mexican 3 Cheese blend…)
Note: Shred it yourself it melts better than pre-shredded cheese! - 1 bunch of Green Onions
- 1 small basket of Grape Tomatoes (or Cherry Tomatoes, or Cocktail Tomatoes)
- Cilantro (optional)
Prep the Cheese and Vegetables for the Mexican Pizza Topping.
- Shred the cheese. Mince the green onion. Chop the tomatoes and mince the cilantro if using it. Set to the side (or covered in the refrigerator) until ready to assemble.
I use my hand chopper to make the prep quick! - Mix the rest of the can of salsa de jalapeno (or tomato sauce) with Desert Pepper Medium Salsa in a ramekin or bowl. This is the sauce for the top of the Mexican Pizzas.
Prepare the Tortillas
- Lightly spray olive oil onto a baking sheet or sheet pan. Layer the tortillas onto the sheet. Lightly spray them with olive oil. Bake for about 3-5 minutes then, flip and bake the other side. You will need an even amount to assemble the Mexican Pizzas. I made a dozen so I needed 24 tortillas.
- Once they are baked, bake any additional tortillas needed. Set them onto a plate and let them cool.
- To assemble them – Add them back onto the cooled sheet pan, once all are baked.
Prepare The Beans
Heat the refried beans on the stovetop. Add 1/4 cup of water to the pot to help soften them. Once they are combined and warm, shut off the stove.
Assemble The Mexican Pizzas
- On the bottom baked tortilla add a layer of beans.
- Top that with salsa and add a layer of ground beef.
- Then, add the top tortilla shell. Add a layer of sauce and shredded cheese.
- Top with a few chopped green onions and tomatoes.
- When ready to serve them – Heat in the oven until the cheese has melted. It only takes a few minutes.
- Garnish with additional toppings. Serve with sour cream, chips, and salsa—and don’t forget the chile con queso! Be sure to get extra salsa for the chips too.
