Some people have a love affair with all things pumpkin. And love jumping in cooking and baking with pumpkin products even before the weather turns to fall. No matter when you decide to make these recipes in late summer, early fall, for Halloween, or Thanksgiving… there might be a few things you need that will help you be more successful when baking and making these recipes with pumpkin.
Tips for baking and cooking pumpkin recipes
Stock up on pumpkin and pumpkin spice early!
- Stock up on pumpkin puree early. Getting closer to the holidays the shelves and stores can run out of pumpkin puree and pumpkin products.
- Ask your grocery store when they will restock canned pumpkins or get fresh pumpkins in.
- The same goes for getting quality pumpkin spice seasoning (my favorite and it’s organic) and pumpkin seasoning. If you are going to bake a lot of recipes with these items. Consider picking up several containers of pumpkin spice.

Check The Expiration Dates Before Baking, Cooking, and Using
Make sure your baking powder and baking soda are not expired! Nothing flops your muffins, cakes, and bread caused by out-of-date leavening agents.

- This is also true if a recipe calls for cornstarch or flour. Check expiration dates. With flour also if it was stored properly.
Check Your Baking and Cookware
Take stock of the baking pans and cooking pota and pans you have. Are they in good condition? There is nothing wrong with a seasoned pan but, if it has a coating of some sort that is starting to peel or chip, it’s probably time to get new bakeware or cookware.
What’s The difference between pumpkin puree and pumpkin pie filing?
- Are canned pumpkin (is just that pumpkin that is canned), pumpkin puree Yes, and no. The main difference is that pumpkin pie filling may have spices such as pumpkin spice, cinnamon, and other spices added. Be sure to read the ingredient list and label to find the differences to get what you specifically want to use for your pumpkin recipes. Typically one is for pies (and desserts) and one for recipes with pumpkin puree and pumpkin pie filling. Here’s a good article on the difference between canned pumpkin and pumpkin pie filling.
- You can make fresh pumpkin puree with pumpkins to use in your recipes, it’s not hard it just takes time. See the directions below.
How to make pumpkin puree
- First, carefully cut the pumpkin.
- Pull out all seeds, and strings in the pumpkin.
- Then bake with the rind on, until the pulp is soft at 350 degrees (covered with foil) *make sure your baking sheet is protected with aluminum foil or Silpat.
- Let cool, Peel the pumpkin off the rind. Use a fork, spoon, or knife.
Mash cooked pumpkin to make the puree (using a food processor) or an old-fashioned potato masher if you don’t have a food processor.
- Let the puree cool before using it.
- Do you want to freeze the pumpkin puree? After the pumpkin is completely cooled, add it to freezer bags. Squeeze out excess air and seal the bag. Add it to the freezer until you are ready to use the pumpkin puree. Defrost it in the refrigerator beforehand.
- I like using these handy freezer bag holders when putting them into freezer bags for freezing the puree. Note: Cook time for pumpkin puree may vary depending on cut size, and shape. Roughly 45-60 min.
